That’s right.
Graham didn’t take into account the minimum ageing requirement of 5 days for MSA graded meat. The meat was packed on 23 November and will not be ready to sell as MSA graded lamb on 25 November.
I don’t understand how any butcher can be sold out of lamb!
In the case of butchers receiving whole carcases, MSA-approved carcases will be identified with an MSA stamp. Butchers will need to ask their supplier for the appropriate eating quality information.
